A family business operated through three generations

A thriving team for innovative and sustainable practices

George & Jill Mure opened Mures Fish House in Hobart’s historic Battery Point in 1973. To source quality,
fresh, local seafood George went fishing. Spending three days a week at sea catching fish for customers
and three in the restaurant running double shifts, they began Mures hook-to-plate philosophy.

Pioneers of the Blue Eye Trevalla industry in Tasmania, their son Will skippered the Mures fishing vessel for
10 years and he and his wife Jude are the current driving force behind Mures Fish Centre on Victoria
Dock. Their children Eve, Wilson and Jock also hold key positions within the business.

50 years on, Mures today incorporates two custom-built fishing vessels, Diana & Selkie, two fishmongers
retail outlets, a gourmet product line, and three award-wining seafood restaurants. The family continues to
champion sustainable fishing practices, Tasmanian seafood, and providing an exceptional experience for
all who visit their iconic restaurants on the waterfront.
