Prepare
If lobster is live, humanely dispatch following the below instructions.
Using a knife, halve rock lobster lengthways and remove the gut and intestinal tract.
Combine crushed garlic with butter, dollop butter onto flesh side of rock lobster.
BBQ
Rock lobster on medium heat, flesh side down for 3min. Flip lobster and BBQ for a further 10-15mins (flesh side up)
Serve with a crisp salad and your favourite wine.
How to dispatch, split and gut a live lobster
Place lobster in freezer until there are no signs of movement. The tail must be limp and the legs must be still.
This will take at least 30 minutes depending on the size of the lobster.
Once the lobster is rendered insensible, immediately spike the lobster between the eyes and split in half (lengthways).
Scoop out the gut and remove the intestinal tract.
Fact Lobsters are opportunistic carnivores, catching and eating fish, crabs, clams, mussels, sea urchins and octopus.
