Spaghetti Sea Urchin

Serves 4 Cook Time 10 Prep Time 20



Spilt out sea urchins and remove the roe. Wash in salt water to remove all gut etc. then set aside.

Thinly slice zucchini, garlic, chillies, and parsley stalks.

Boil a large pot of water. Add salt and pasta to the pot.


Preheat a pan and add generous amount (1cm deep) of olive oil. Bring the pan to low heat. Add and fry sliced ingredients to the pan.

Remove the pasta two minutes before recommended boiling time and immediately add to the pan with the remaining ingredients. Add sea urchin roe to the pan and gently mix well.


Squeeze lemon with its flesh. Top up with a little bit more of olive oil and parsley. Give the dish a final mix before plating.

Sprinkle a little bit of parsley and chilli flakes for garnish and extra flavours.


4 Long Spined Sea Urchins (20 roes)

1/2 a pack of Spaghetti

Olive Oil


1 Zucchini

3 Garlic Cloves

2 Chillies


1 Lemon
