Wood Fired Tasmanian Rock Lobster with Herb and Almond Butter

Serves 2 Cook Time 8 Prep Time 10

Method

Wood fired oven

Prepare wood fired oven*.

Prepare Butter Almond and Herbs

On a chopping board, mix almond, parsley, and dill together. Almond should be one to one ratio
Add butter to almond and herbs. Finely crate garlic onto the butter. Add chili flakes, salt, and lemon juice.
Knead the ingredients with your hands to combine the flavours.

Rock Lobster

If  lobster is live, humanely dispatch following the below instructions. Using a knife, halve rock lobster lengthways and remove the gut and intestinal tract. Combine crushed garlic with butter, dollop butter onto flesh side of rock lobster.

Add butter almond and herbs mix on top of lobster. Make sure the entire lobster is covered.
Transfer lobster onto a  pan with surface covered in rock salt to hold lobster upright.
Put the lobster into the wood fired oven with the head pointing at the fire.

Cook for 6-8 minutes.

Serve

Remove the pan from the oven. Serve lobster onto plate.

 

*You can also cook lobster in a normal oven for 10-12 minutes at 220°C.

These Tasmanian Southern Bluefin Tuna were caught in the deep southern waters of Tassie, near Mewstone Rock, where our team worked hard to land them around the cheeky seals lurking nearby.

  • 🦪 🏆Our first entry is in for the Australian Oyster Shucking Championships! 🏆🦪

    On Saturday, Tasmanian shucker Zoe Jacobson secured her third state title at tasseafood annual shucking competition, opening 12 Coffin Bay Oysters in just 1:06 minutes! Not only was she fast, but her presentation was flawless with no penalties from the judges.

    Zoe (livingtheshuckingdream) is no stranger to the big stage, and we can’t wait to welcome her back to Narooma in May. Here, she’ll take on NSW’s native Rock Oyster, known for being trickier to open than the Pacific Oysters she’s used to.

    Fast, clean shucking is an essential skill for oyster farmers, and the Australian Oyster Shucking Championships bring together the best shuckers from across the South Coast and Australia. It’s a thrilling showcase of speed, skill, and camaraderie - and it's one of the biggest highlights of Saturday’s festival program.

    The overall champion will not only take home the Narooma Oyster Festival Perpetual Trophy and the John Susman Medal, but they’ll also earn the chance to represent Australia at the World Oyster Opening Championships in Galway, Ireland, this September.

    Fastest time in recent years?
    In 2022, Jim Yiannaros of Batemans Bay Oysters shucked 30 Rock Oysters in just 2:39 minutes!

  • As part of Mures commitment to sustainability, we have been collecting data from our catch as part of the industry managed Shark Industry Data Collection (SIDaC) project for over five years. Blue Eye Trevalla and Pink Ling, lengths and otoliths (fish ear bones for ageing) are sampled as part of this project.
    .
    This week, Russell Bradford from CSIRO, trained Mures staff on how to take DNA samples from Blue Eye Trevalla. Samples of flesh, taken from the Blue Eye Trevalla cheek, are later analysed and will be used in a CSIRO project, led by Dr. Robin Thomson.
    .
    This data is used to develop methods to estimate the size of the Blue Eye Trevalla population, stock structure and age of these commercially important fish. All of this helps to ensure that a sustainable fishery can be maintained so there is plenty of fish for future generations to come!

    Wine lovers speak of terroir, the taste of the earth, where the grapes grew. Oyster lovers talk of merrior, the taste of the sea. Oysters embed the characteristics of where they live. Oysters maintain their salinity balance by producing amino acids, and these increase their savoury umami taste. No wonder oysters are always named after where they grow.
    This time of the year our flavour has a cucumber flavour. Go and visit lots of Oyster farms and try their flavours as they are all different.   • 🌟Monday 10th February, final day of the Australian Wooden Boat Festival 2025. Were we ready for the festival to come to an end? NO! We had many visitors at our marquee, always eager to try delicious Tasmanian seafood. Abalone, Salmon, Oysters, and Scallops, everything on the program drew the crowd to the marquee.🌟

    We had interstate visitors and people who came specifically to our marquee, hourly, to learn what Tassie's seafood is all about. Not skipping a session.

    👏The experience for us was rewarding and worthwhile and we hope the sentiment is reciprocated.👏
