Wood Fired Tasmanian Rock Lobster with Herb and Almond Butter

Method

Wood fired oven

Prepare wood fired oven*.

Prepare Butter Almond and Herbs

On a chopping board, mix almond, parsley, and dill together. Almond should be one to one ratio
Add butter to almond and herbs. Finely crate garlic onto the butter. Add chili flakes, salt, and lemon juice.
Knead the ingredients with your hands to combine the flavours.

Rock Lobster

If  lobster is live, humanely dispatch following the below instructions. Using a knife, halve rock lobster lengthways and remove the gut and intestinal tract. Combine crushed garlic with butter, dollop butter onto flesh side of rock lobster.

Add butter almond and herbs mix on top of lobster. Make sure the entire lobster is covered.
Transfer lobster onto a  pan with surface covered in rock salt to hold lobster upright.
Put the lobster into the wood fired oven with the head pointing at the fire.

Cook for 6-8 minutes.

Serve

Remove the pan from the oven. Serve lobster onto plate.

 

*You can also cook lobster in a normal oven for 10-12 minutes at 220°C.

500 g butter

Almond, chopped

Parsley, chopped

Dill, chopped

Garlic

1 tbs Chili flakes

Salt

½ lemon
