Method
Batter
Heat 4-5 cm oil in a saucepan on medium heat. In a bowl, add flour and soda water. Whisk until the batter is smooth. Season with salt and pepper. Place oysters in batter until fully coated.
Fry
Add coated oyster to hot oil and cook for 3-4 minutes. Remove oyster from oil. Season with salt and pepper. Place a small dollop of crème fraiche in each oyster shell. Add fried oyster. Top with another dollop of crème fraiche and garnish with chives and lemon zest.

6 Tasmanian Pacific oysters
Vegetable oil for frying
¼ cup plain flour
⅔ cup soda water (chilled)
1 lemon, zested
1 bunch chives, finely chopped
2 tablespoons crème fraiche
