Grilled Flounder with Miso Green Pepper Butter

Serves 4 Cook Time 20 mins Prep Time 15 mins

Method

Ask your fishmonger to scale and gut your whole fish.

Heat your oven to 160ºC.

Miso Peppercorn Butter Sauce

In a small pan, combine miso, green peppercorns, and butter over a moderate heat until butter is melted. Keep the mixture warm over a low heat.

Bake

Line a tray with baking paper. Place your fish on the tray and bake in the oven for 10-20 minutes until cooked. Exact time will depend on the size of your fish.

Optionally, blister the fish skin under the grill, keeping a close eye on it. Once cooked, place the fish on a warmed plate. Pour lemon juice and miso peppercorn sauce over the fish.

1 whole flounder (ling or flat head are also good options)

1 lemon, juiced

100g salted good quality butter

2 tablespoons white miso

2 tablespoons pickled green peppercorns
